I spent 3 days in Lafayette a couple years ago. The white Boudin is ok, but my favorite sausage from down that way is Andouille. I bought 10 lbs. of gator tail meat and took it home. I like to fry it up in small chunks, just like venision. I would just as soon have gator. As for the foie gras, I’m skeered!
